So glad its the weekend, I get to spend time with family and friends…and obviously cook without worrying about going to work the following day. So today I had just friends over and decided to make a platter. There was a lot of licking fingers and emptying of plates. So I am a happy woman. Until next time stay blessed

CRUMBED CHICKEN STRIPS
Coat in egg, flour and crushed cornflakes
Deep fry till golden brown

PASTRY RINGS
Fry chicken breast in garlic, salt and a dash of lemon juice, and 2 tablespoons of worcestershire sauce.
Add mushrooms and bacon and fry for 5 minutes
To thicken the filling I added plain yorghut and added a bit of sweet chilli.
Put the filling on the pastry , roll then cut.

POTATOES
Just deep fry in oil till golden brown

Something Cheesy

Cheese just adds this ” thing” to any meal. Its one of those things I used to hate, I was like why eat food that is rotten. ( kwaive kusaziva).IMG-20190529-WA0015But now I have to hold myself not to indulge too much. My fridge has to have feta, cheddar or mozzarella. My favourite fast foods are burgers and pizza( probably because of the cheese). I am trying to eat healthy though so cutting my carbs… easier said than done but I am trying. So anyway what I made is what I would like to call Cheesy chicken n veggies. I didnt have this with any starch but you can have rice,potatoes or macaroni. Until next time,stay blessed.

Cut chicken breast into cubes
Fry in oil, chilli garlic and bbq spice
Add red onions and grated tomatoes and sautee for 3- 5 minutes
Add mushrooms, baby marrow and cauliflower and cook for 5 minutes.
Add 2 tablespoons of plain yorghut to make it creamy.

Grate your cheese and mix with the chicken
Microwave or put in oven for 3 minutes.
Supper is ready.

Now this is a winner

My idea of a good weekend is definately not cooking for hours. I prefer simple meals that dont take too long. I call this one a winner because ” ndaita kudhuukirwa mumuromo” like literally I was smiling eating it. The secret to a good wrap is a good binder which can be a sauce or puree, whichever tickles your fancy. Try this and let me know what you think. Until next time, God bless you.

Chicken and mushroom wrap

Chicken breast
Marinade for 2- 3 hours in honey,water, salt, garlic flakes, bbq spice,chicken spice)
Grill chicken for 20 to 30 minutes

Crumbed mushroom
Coat mushrooms in eggs, then in flour&bbq spice and repeat
Deep fry in hot oil until golden brown

Base sauce
Mayonnaise mixed with worcestershire sauce

Puree
Thai sweet chilli with avocado 👌🏽👌🏽

Cravings

IMG-20190513-WA0011I cant believe I used to hate mushroom. I remember my mum loved it so much she tried to bribe us. She was like “if you finish the mushroom soup, you will have ice cream”. Our love for ice cream unfortunately was superceeded by our dislike for mushrooms. Today mushroom is a must have on my grocery list. I was craving ribs and mushrooms so this is what I had for supper.
Ribs, potato wedges and mushrooms. Try this, I promise you wont be ordering ribs anytime soon, just do it yourself. Enjoy and till next time God bless you.

Ribs

Boil ribs till tender with the below ingredients :

Salt, worcestershire sauce, paprika, bbq spice and thyme.

Basting

Once boiled,  put in oven with the beloq basting

Stock from the ribs, honey, soy sauce, garlic chilli

Mushrooms

Sautee mushrooms in oil, add a bit a garlic for 5 minutes

Potato wedges

Boil potatoes in water and garlic(I love garlic)

Once done cool and coat in eggs

Coat in flour and spices then repeat again.

Deep fry your wedges and wala.

Sauce- Mayonnaise, chutney, garlic chilli again( hides face)

So for a long time I wasn’t really sure what I was really passionate about. I think its always been there but for years it had been tucked away at the back of my head. I suddenly feel nostalgic when I remember when I was around 15 years, in a small town I grew up in , Mashava. Christmas days for me would be spent cooking  from breakfast to dinner, and come to think of it I did not complain at all. Now fast forward to more than a decade  later, I know without a doubt that I love cooking. Its like my happy place. So I decided to start this journey because of my love for cooking and also for my friends who don’t like cooking.
